Strawberry Shortcake “From Scratch”.

Recipe:

Strawberry Filling

Strawberries
Sugar

Remove leaves from strawberries and quarter (or cut smaller depending on the size of your berries) and put into bowl. Sprinkle a light dusting of sugar over the top and place in fridge until ready to assemble cakes.

Cake
Made like a drop biscuit. I only wanted 2 cakes so I scaled down (and sweetened) this recipe.

2c Flour
1tbsp sugar
2tsp baking powder
1/2 tsp salt
1/3c butter, cold & cut into chunks
7/8c milk

Mix all dry ingredients together, then add butter and ‘pinch’ with hands ( I don’t have a pastry cutter) until well combined. Add in milk until you reach a doughy consistency. I scooped spoonfuls onto parchment paper on a baking sheet and baked around 10 minutes in a preheated 450F oven.

Whipped Cream

Heavy Whipping Cream
Confectioners Sugar

Put however much whipping cream you’d like into a bowl and sprinkle a bit of sugar. Mix with hand mixer until it turns into whipped cream. If you mix too long it will start to turn into butter. Don’t panic, just add a little more heavy whipping cream and it will fix itself.

Assemble cakes and enjoy the deliciousness!

What’s Poppin?

Saturday night has become our family movie night, and tonight we decided to make popcorn to go with it. Since we don’t have a microwave I attempted stove top kettlecorn. Adapted from this recipe. It’s very simple:

Put 1tbsp peanut oil in big pot on med-high heat with 2/3 kernals.
Put lid on slightly crooked to let vent.
Wait for the kernals to pop.
Add 1tbsp granulated sugar
Then add 8tsp popcorn kernals.

It makes a bowl big enough for small family.

Triple Layered Creme Wafers

I made these for an easter party at my son’s school yesterday. You can make them too! You’ll need this recipe. I bought a miniature butterfly cookie cutter from bake it pretty, and used a shotglass for the circles since I don’t have any regular circle cookie cutters. I was rushed so some (see also: most) of them are a lot thicker than I’d like. 48 butterflies and 96 circles will make four dozen.
